I think this is a typo in installer/data/mysql/kohastructure.sql, line 1397:

`pronouns` longtext COLLATE utfmb4_unicode_ci DEFAULT NULL COMMENT
'patron/borrower pronouns',

Should be "utf8mb4_unicode_ci" instead?
