I feel like it gets complicated with the defaults :(

If the person cataloging the original record decided on not using the defaults
(empty or set to a different value), I feel like we would not want to add them
back in. I'd expect an exact copy of the existing record using the feature, but
this would mean that there are changes I can't control and might have to undo
again.

It probably all depends on the use cases (what kind of defaults, why you are
copying the record etc.) and both views are valid.

Maybe we could get some more cataloguers to weigh in?
