So I fixed the issue mentioned in my last comment.. it was a bug after I sorted
my updated swagger.yaml again using Jonathans mentioned quick script (I
neglected to add the 'parameters' piece in).

All working now, tests run and pass, API endpoints tested and working, plugins
tested and working :).

Only think I can't seem to work out is I get a 403 when trying to visit
/api/v1/.html now.. so the HTML render of the spec does appear to be broken..
