Rebased so it works and devs can take a look. I will refactor this into 'coded
values' (not just AV) and will stick to a similar approach to Agustin's.

While I think just adding <attribute>_str to the response might suffice some
use cases, I think having a lookup table will be better for knowing things like
'where to pick the values for a dropdown' etc.
