The expectation of Ctrl+C is to select any amount of text/lines of text to
copy. Across software it is almost a universal expectation. Koha says that
Ctrl+C is to copy a field only. This seems to be causing a conflict as noted
above.
I think the much simpler solution is to change the keyboard shortcut to copy a
field from Ctrl+C to Ctrl+Alt+C by default. I tested the new key combination
and this returns Ctrl+C to the expected behavior while allowing the ability to
copy a field with a different key combination.
