I just tried a client-side replace where the STX character gets converted into
 but it looks like it gets converted into &#2; 

Something I find interesting is that in the database we'll store "David’s
awesome record" but then the MARCXML export to the browser will encode the
UTF-8 encoded character ’ as &#x2019;

I'm going to poke around in this a bit more...
