I checked in one of the public opac searches also using KOHA, though we select the other item type other than books it still displays as "Material type: book". Item type is a value which you can define according to your library's needs. It might match the material type of your item, or it might be used to define circulation rules. How you use it is up to you. Material type is a setting defined by the MARC standard: https://www.loc.gov/marc/bibliographic/bd008.html You can select from existing values but cannot create your own.
