I looked in to this a bit and it looks like it's a problem with the combo of the word 'and' and using the complete-subfield:

/cgi-bin/koha/opac-search.pl?q=su,complete-subfield: {Rites%20and%20ceremonies.}

I get results from "opac-search.pl?idx=su%2Cphr&q=rites+and+ceremonies" and "opac-search.pl?q=su:"rites and ceremonies" I get no results from your example, "opac-search.pl?q=su,complete-subfield:{Rites and ceremonies}" but I'm not sure how you came up with that search.
