Are you referring to the "Holds to pull"/"Pending Holds" report at /cgi-bin/koha/circ/pendingreserves.pl? The Holds Queue report (/cgi-bin/koha/circ/view_holdsqueue.pl) doesn't have an option to sort.

The "Holds to pull" report has javascript-based table sorting enabled but it probably shouldn't since it's a report that is potentially very large.
