Problem is not Ubuntu 16.04, but MySQL 5.7. You can go ahead and install MariaDB instead ;-)
 
So I took a brand new 16.04LTS server and installed koha-16.05.01.tar.gz
which un-tars as 3.22.07. Not easy. Mostly dependencies. Tried
koha.oldstable and koha.stable with no success -- HTTPD::Bench::ApacheBench
is more than problematic, libbusiness-isbn-perl is already the newest
version (2.010-1ubuntu2) and libtest-www-mechanize-perl is already the
newest version (1.42-1) -- but above all Test::DBIx::Class is a headache
compiling from CPAN.

You can skip Test::DBIx::Class and HTTPD::Bench::ApacheBench. Those are used for running tests only.
 
No need to tell me not to use tarballs (been there, been told; lost cause,
I love simplicity.)

You love 'old-ways'. Packages are way simpler for that matter :-D
