Minor koha-testing-docker behavior change

Hi all, this is a gentle warning for koha-testing-docker users. Since the very beginning the README.md clearly stated the need to do: $ cp env/defaults.env .env as part of the setup process. That .env file is where your changes to the defaults should be placed. But it wasn't using that file at all so it had no effect. And it didn't break if the file was absent. koha-testing-docker has been fixed to properly pick that file, and from now on it will explode because of it being missing if such was the case.
