The mapping is entirely controlled by your framework, and the default framework
includes mappings at both the bib level, to biblioitems.itemtype, and the
item-level at items.itype.

Could the problem be related to an upgrade from a previous version of Koha? I'd
recommend checking the mappings and making sure there is an item-level one
defined in your frameworks.
