Just to add my 2 cents:

If I recall correctly, other systems with advanced editors tend to create
subfields with a process like so:

1) Ctrl + Chr (e.g. 's' or 'd'). This signals to the system that you want to
add a subfield. It inserts something like ($_) as a visual signifier.

2) You type in a letter for the subfield (e.g. b), so that the visual signifier
turns into $b. This is just for display though. Under the surface, it knows
that $b isn't data, but is actually a sort of control character denoting a
subfield. 

I haven't at all looked at the code for the advanced editor though, so not sure
how easy this would be to achieve...

I suppose the keyboard sequence or a button followed by the subfield code input
would create a new object or array element...but you'd still want to show all
subfields as a string on the display even though they wouldn't be an actual
string in the object(s) that are being saved.
