Dear Stefano
I think you may have problem with your koha  installation because it is
 work for Arabic you can see that
there is many library in the Arab world using koha like  Neelain university
library/ in Sudan  :
http://41.67.12.22:8001/cgi-bin/koha/opac-main.pl
try to retrieve by typing some arabic keywords like :
 مكتبات
which means libraries .
and you will see the result in Arabic
