At least in Australia a person's signature is personal information (https://www.oaic.gov.au/privacy/your-privacy-rights/your-personal-informatio...), and it's important to only collect personal information that is necessary for the organisation's functions/activities. In this case, what would be the purpose for collecting and storing this information?
