If you want to edit a field that has an authorized value assigned to it, you should unassign the authorized value. It may be enough to not grey it out and have a pop up if there are items that says "There are items attached to this record, delete items and record? or Don't Delete?" Some sort of confirmation or question posed to the librarians. And you're right!
